yummy golden cookies

Brittany is one of the amazing members of our DDCSP Alumni Council who previously served on the Steering Committee. She is very creative and apparently an accomplished baker as well! 

Sunbutter Cookies
Prep time:  about 1 hour and 30 minutes
Bake time: 12-15 minutes
Makes about 25 cookies


  • Dry Ingredients:
    • 1 1/4 cup all purpose flour
    • 1/2 cup white sugar
    • 1/2 cup brown sugar
    • 1 tsp baking soda
  • Wet Ingredients:
    • 1/2 cup room temp butter, vegan butter, or vegetable shortening
    • 1 cup sunbutter
    • 1 egg or egg substitute
    • 1-2 tsp vanilla extract


  1. Preheat the oven to 325°
  2. Mix dry ingredients together in large bowl
  3. Cut Butter/shortening into dry ingredients (I usually use a metal whisk to break up the butter into the dry ingredients until it's cut into small pieces)
  4. Add wet ingredients and knead dough until it has a uniform color and texture
  5. Roll dough into a cylinder and wrap with parchment paper or cling wrap 
  6. Chill for an hour or more before baking
  7. Use your hands to roll dough into spheres (about an inch or so in diameter) and place on a pan with parchment paper
  8. (Optional) use a fork to make a criss cross design like a tic-tac-toe grid
  9. Bake at 325° for 12-15 minutes
  10. Let cool at room temperature and then serve!
